Recipe: making curry rice like Miam Miam's

Today I thought I'd share a recipe of how I recreated the dish that I had at Miam Miam (which was super expensive). It's simple, it's cheap, and it's also pretty quick. It's a recreation of a cheese and egg sausage baked curry rice I had there, but with. A little twist (I wrote what was optional) 


Preparation time: 5-10 minutes
Cooking time: 40-45 minutes

Ingredients: 

Beef / Sausage or any meat you want, just a few slices
Onions (chopped or diced, around 1/4-1/2 an onion depending on your taste preference) (optional) 
Potatoes and carrots (just a little bit, but this is optional) 
1 egg
Some Parmesan (you can also shred your own cheese) 
Broccoli: (around 1/4-1/2 a stalk depending on your taste preference)
Vermont curry (you will need around 1 cube) -> I used the medium hot packet.
Rice: one portion
Some oil 

You will be needing:
Frying pan and frying spatula
Baking dish 
Spoo
One tiny pot
Rice cooker

Steps:
1. Chop up the onions, potatoes, carrots and broccoli. (Depending on whichever you have or will be using). Start cooking your rice in the rice cooker

2. Slice up your sausage or meat if necessary

3. Adding a bit if oil, start cooking your beef/ meats in a frying pan. You can add your onions if you are adding any when the meats are around halfway cooked (for sausages you can put it together)

4. When everything is well cooked, put in the cube of Vermont curry. Add water according to the instructions on the packet.

5. Add boiling water to a pot and boil your broccoli. 

6. In the meanwhile, take out your baking dish, and put the cooked rice at the bottom of your baking dish. Optional: add a layer of cheese on top. 

7.Layer the curry on top of the rice (and cheese).

8. Add your cheese around the sides of the baking dish, leaving the centre open for your egg. 

9. Crack an egg in the centre.

10. Put it in the oven to bake for approximately 10 minutes at 230 degrees Celsius. 

11. After ten minutes, check if the cheese is melted and the egg is well cooked. Take it out of the oven and add your boiled broccoli on top. 


I hope this recipe helps you guys recreate the taste of the curry rice I had at Miam Miam 

When I had this at Miam Miam, they used sausages but I used beef in my recipe. Also, they did not put any onions. 

The taste of this dish is extremely similar if not exact though, because the base ingredients are kind of the same.
